Raw Chocolate Dipped Strawberries

Since V-day is coming up I thought it appropriate to make chocolate dipped strawberries.  I see ads for them everywhere...charging an arm and a leg for them.  But I think it is so much better to make your own.  Especially when you can use raw chocolate!  I suppose you can dip them in many things, but I dipped them in raw pistachios this time, as I thought their crunch and salty nuttiness would be delicious with the dark chocolate. Not to mention the beautiful green color complimenting the red berries!  I shared them with my boyfriend Eric and he approved...they did not last long.  Whip up a batch of these for your sweetheart and they will be impressed!

Raw Chocolate Dipped Strawberries
Makes 12

1/2 cup raw coconut oil, warmed to liquid
1/2 cup raw cacao powder
1/4 cup raw coconut nectar, or agave nectar
a pinch sea salt

12 organic strawberries
1/2 cup chopped raw pistachios

In a bowl, whisk together the coconut oil, cacao powder, agave nectar, and sea salt until smooth.  Lay out a piece of foil on a tray, and place the nuts in a bowl.  Dip a strawberry into the chocolate (dipping a few times to coat), then into the pistachios, then set on the foil.  Repeat with the remaining berries, then set the berries in the freezer for about 15 minutes to set the chocolate.  Enjoy!

*feel free to be creative and replace the pistachios with your favorite nut or coconut!
