Autumn Green Juice

On the contrary to popular belief I do eat tons of veggies, and not just dessert.  After all, lots of greens and veggies are key to doing well on a raw vegan diet.  I eat tons of kale in the form of salad and chips, but sometimes it is nice to enjoy it in drinkable form too!  You know, those times when you feel like you need greens, but do not have the time to chew a large plate of them.  Last Saturday I was so busy working on my recipes that I did not have time to leisurely make myself a nice salad and I decided that a green juice sounded fabulous. 

I had a lot of kale in my fridge, so that was to be the main ingredient, but I wanted to include some delicious autumn produce as well, so I added a tart Haralson apple, and sweet local pear.  I also through in an orange, the juice of one lemon and ginger to make it pop and cinnamon and turmeric.  I was not sure how it would taste, but what resulted was wonderful.  It was so refreshing and energizing I felt pretty awesome for the rest of the day.  If you need an afternoon (or whatever the time of day you are in need of it) boost, you need to try this!  There is no excuse for not having time, it takes only a minute to make.

Autumn Green Juice
Serves 1

1 organic tart apple, diced
1 organic pear, diced
one orange, peeled
juice of one large lemon
1 inch chunk fresh ginger
1 bunch organic kale
1 tsp cinnamon
1/2 tsp turmeric

Combine all ingredients in a high speed blender, and blend until smooth, using the tamper to press the ingredients into the blades.  Pour into a glass and enjoy!
