Roasted Butternut Squash Tomatillo Chili Tacos

I love tacos so much, I could eat them every day! They are something that Eric and I choose often when it comes to going out to dinner or take out and we might even be serving them at our wedding next year we enjoy them so much.  But I also love to make them at home, because I can use whatever ingredients I have on hand since are so versatile when it comes to what you can fill them with. Not only that, they are healthy WHILE being delicious which is super important to me when it comes to choosing what to make for dinner. My favorite tacos to make lately are Butternut Squash Tomatillo Chili Tacos, using Kevin's Natural Foods Tomatillo Taco Sauce, which makes them quick and easy to make since I don't need to whip up a sauce myself.

This sauce is actually good on other things like drizzled over a salad, or in a burrito or as a garnish for a soup you want spiced up.  That is why I like it, it has many different possibilities for enjoying it! I was happy to have found it, because I like green tomatillo sauces, but I don't always like all of the work it takes to prep tomatillos.  With this sauce, I can enjoy them without all of the work!  But back to the tacos.  They are really quite simple and easy to make, the only part that takes a little time is roasting the squash, and can be done while you are doing other things, which I usually am when making dinner.

You just have to sautee some onions and jalapenos, add in the delicious Kevin's Natural Foods Tomatillo Taco Sauce and some white beans and you have some flavorful taco filling!  Something that is really important to me when it comes to tacos is that they are packed with a lot of flavor since I don't fill them with meat. I usually put a lot of salsa or a sauce on them, but this sauce takes its place and they are even more flavorful than usual.

I filled some corn tortillas with the bean mixture and the roasted squash, then topped them off with some cilantro, lime juice, avocado and a little more sauce and they were so delicious!  It was a nice quick, healthy weeknight meal!  I think if I had to choose one savory meal to eat for the rest of my life, it would be tacos! Roasted Butternut Squash Tomatillo Chili Tacos

Makes 6 tacos, serves 3

Prep time: 15 minutes

Cooking time: 45 minutes


  • 3 cups organic butternut squash, cut into 1 inch cubes
  • olive oil
  • sea salt
  • 2 tsp olive oil
  • 1/2 cup chopped white onion
  • 2 jalapeno chilies, minced
  • 1 1/2 cups cooked white beans
  • 1/4 tsp sea salt
  • 1 7 oz package Kevin's Natural Foods Tomatillo Taco Sauce
  • 6 corn tortillas
  • cilantro for garnish
  • 1 avocado, diced
  • limes cut into quarters



  1. Preheat your oven to 375F degrees, and oil a sheet pan.
  2. Toss the squash with just enough oil to coat it lightly and spread out on the prepared pan.  Sprinkle with a little sea salt. Place in the oven and roast until tender and starting to brown, about 45 minutes.  Remove from the oven.
  3. Meanwhile, heat 2 tsp olive in a pan, and add the onion and jalapenos.  Sautee until softened, about 5 minutes, then add the beans, sea salt, Kevin's Natural Foods Tomatillo Taco Sauce, and cook until it is all heated through.  Mix in the squash.
  4. Spoon the bean and squash mixture into your 6 taco shells, top with a little cilantro and avocado and squeeze a little lime over each one.  Serve!
