Raw Pecan Praline Fudge
makes about 16 squares
3 cups dried, finely shredded coconut
12 medjool dates
1/4 cup plus Tbsp coconut nectar
1/2 tsp sea salt
6 Tbsp water
1 Tbsp pure vanilla extract
1 tsp maple extract
2 Tbsp raw pecan butter or raw almond butter
1/2 cup chopped raw pecans
Raw chocolate:
1/4 cup raw cacao powder
1/4 cup raw coconut oil, warmed to liquid
2 Tbsp raw coconut nectar or raw agave nectar
a pinch of sea salt
In a blender, grind one cup of the shredded coconut to flour. Remove and set aside. Blend the remaining 2 cups of the shredded coconut to coconut butter and set aside. In a food processor, place the dates, coconut nectar, sea salt, water, vanilla, maple, almond butter and reserved coconut butter and process until smooth. Add the coconut flour and process until well combined. Spread out onto a piece of tinfoil in a rectangle 1/2 inch thick, and sprinkle with pecans. Press the pecans in.
Whisk together chocolate ingredients until smooth, then drizzle over the fudge (it is easier if you put it in a ziplock bag and cut the tip off and squeeze it out over the bars). Place the fudge in the freezer for about an hour until it is firmed up, then cut into squares (I did 16, but it is your choice how big you want them). Store in the fridge.

The 3rd cup is being used in the first sentence: "In a blender, grind one cup of the shredded coconut to flour" followed by "the remaining 2 cups of the shredded coconut"
You grind one of the cups to flour, then the remaing two to butter which equals 3 cups.

Yes, it was a typo as I was typing up the recipe as I went and added additional coconut and I forgot to change the recipe when I published it. I hope you do make them :)!

I looked to see if you had a recipe already, and not seeing one, I tried my own, and it turned out pretty much just like this new one, except no chocolate. This looks absolutely delicious!<br />Instead of grinding 1 cup coconut flakes into a flour, could I just use coconut flour if I have it on hand? I assume the measurement would be less than one cup, right? Do you know how much coconut flour is used? Thanks!
If it is homemade, yes, but I find that the premade stuff tastes off and the result is different. I am thinking it would actually be slightly more than a cup actually.

How do you make coconut butter? I have coconut flour, do i just blend this on its own until it becomes a butter? Can't wait to make it on raw baking sunday!
It is in the recipe (blending the shredded coconut to butter like you said). I just figured, it is cheaper than having people buy it when you can make your own and I made my own in the recipe so I am not sure what the measurement would be for storebought ;).

A cuisinart, but I used my vitamix to make the coconut butter part.

It is a low glycemic sweetener made from coconut. You can find it at Vitacost online and other health food sites.
