Ginger Pear Kale Salad

 
I am obsessed with my kale salads.  Well, who am I kidding, I am obsessed with kale anything, but I love the salads because I can tailor them to whatever is in season and whatever I am craving. Last weekend, Eric had given me a bunch of pears, and rather than simply use them in dessert, I thought they would be wonderful in a kale salad.  I made a pear based dressing, made a bit silky with pecan butter, and laced it with a bit of ginger for a kick.  For a little sweetness a bit of dates, and some lemon to balance it out.  Let me tell you, that dressing was so freaking good I could have eaten a bowl of it.  But...it made it into my kale salad.
 
 
I tossed in some more pears, some shallots, and golden raisins along with a few sesame seeds and it was one of the most delicious kale salads ever!  I ate a huge plate of it, and when it was all gone, I could only wish I had more.  Luckily it will be pear season for a while, so this will definitely be a weekly thing. 

 

Ginger Pear Kale Salad

Serves 2-4

Dressing:
¼ cup raw pecan butter or raw almond butter
1 sweet pear, diced
4 soft medjool dates, pitted
1/3 cup lemon juice
2 Tbsp cider vinegar
½ tsp sea salt
2 tsp minced ginger
 

2 bunches kale, washed and torn into bite sized pieces

2 sweet pears (such as d'anjou), sliced
1 small shallot, sliced
1/2 cup golden raisins
3 Tbsp sesame seeds

In a high speed blender, combine all dressing ingredients and puree until smooth.  In a large bowl, combine all remaining ingredients, then pour the dressing over and massage in with your hands until it is well coated. Serve!
