Carrot Cake Smoothie Bowl

Smoothie bowls have become my (non) guilty pleasure lately.  A sweet bowl full of delicious smoothie topped off with plenty of goodies, what more could I ask for?!  I feel like I am enjoying dessert when I am actually enjoying something full of nutrients that I need to energize/refuel.  Last weekend, I was hungry after my hard workout, and I decided to make a smoothie bowl with all of the goodness of carrot cake.  Now, I admit I had been dreaming this one up all during my workout.  What did I feel like eating...hmm, carrot cake sounded good!

I made a simple base with just carrots, bananas, some protein powder and the spices I always add to my carrot cake and it was delicious!  I topped it off with a few things I feel belong in carrot cake...walnuts, raisins, and coconut.   Also with some things I try to eat daily to keep my omega 3s up, flaxseeds, hempseeds and chia seeds as well as some goji berries (which I think would be wonderful in carrot cake as well).  As a whole, this was a big bowl of happy.  Well, at least it made me pretty happy, I felt like I was enjoying the hybrid of smoothie and carrot cake which is pretty amazing!

Carrot Cake Smoothie Bowl
Serves 1

Smoothie:
2 large bananas
1 large carrot, cut into pieces
1 scoop raw vanilla protein powder (optional, I used Garden of Life brand)
1/4-1/2 cup raw hemp milk or coconut milk (depending on how liquidy you like it, I like mine thick so I add less)
1 tsp pure vanilla extract
2 tsp cinnamon
1/2 tsp cardamom
1/4 tsp nutmeg
1 small piece fresh ginger
stevia to taste (or your choice liquid raw sweetener)

Toppings:
goji berries
raisins
raw walnut pieces
flaked dried coconut
chia seeds
ground flax seed
hempseeds

For the smoothie, combine all ingredients in a blender and blend until smooth, using the tamper to press the mixture into the blades.  Pour into a bowl, and top with toppings (I used about 1 Tbsp of each).  Enjoy!
