Raw Hazelnut Fig Cacao Truffles


I have really been craving chocolate lately. As I am sure you can tell since I made a few quite decadent chocolate recipes recently.  But sometimes I want something simple that comes together quick with few ingredients that I can enjoy fast, and is not overly sweet but just sweet enough.  That was the case last Thursday.  I was thinking to myself...some raw truffles sound really good.  And of course they are always fast to make.


Normally I would reach for just dates and walnuts, but this time since I had some figs on hand, I wanted to incorporate those.  And I thought some hazelnuts would be delicious with the cacao and figs. I buzzed it all up in the food processor and in a matter of minutes...deliciousness.


These are kind of addictive but that is ok.  This is naturally fruit sweetened dessert, just what I was craving.  And, I love the texture in these.  Figs have tiny little seeds like raspberries do, and that is what I love about them besides the sweet flavor.  These truffles are crave worthy.  If you are looking for a quick sweet indulgence that is easy to make, these are for you.  No excuses not to make them.  Get on it!


Raw Hazelnut Fig Cacao Truffles

makes 12

1 cup dried figs

1/2 cup soft, pitted medjool dates

1 cup raw hazelnuts

1/8 tsp sea salt

1/2 cup raw cacao powder

Combine all ingredients in a food processor and process until the mixture holds together when squeezed. Shape into 12 balls, and leave as is, or roll in additional cacao powder if desired.
